The national food of The Bahamas is Conch (pronounced "konk") and peas and rice. This mollusk's firm white meat is enjoyed throughout the islands. It is enjoyed in many forms. Fried, baked, salads, etc.

I never liked conch until perhaps 2 or 3 years ago when I came across someone who did a really great job at cooking same. Now I can identify with this Bahamian dish and one my dad used to love cooking way back in the good old days !!
